This whiskey was created by the associate distiller Eddie Russell, the son of master distiller Jimmy Russell. It has a high rye content in the mash bill and is aged in casks that have been through a heavy char, this results in a huge flavour explosion. The nose of the Wild Turkey 81 Bourbon, is that of strong spicy aromas with a longing vanilla, fudge and coffee aroma. The palate is rich and buttery, with flavours of honey and toffee, there are also some undertones of rhubarb tart that leads onto the finish which is full of caramel and coffee.
