Lockes 8 Year Old Single Malt Irish Whiskey, comes from the finest whiskeys in the Cooley Distillery. It is a double distilled Single Malt using pot stills. It ages between 8-10 years old. 10% of the barley used is peated malt, which gives the whiskey an underlining smoky, peaty flavour. It was first released in the year 2000 and has been successful ever since winning a gold medal and best in class at the 2009 International Wine and Spirits Award.On the nose Lockes 8 year old Single Malt, has some unusually aromas, beginning with toasted oak, freshly squeezed orange juice and a the wood shavings off a freshly sharped pencil. As for the palate the whiskeys is smooth and woody with quite a few oaky flavours mixed in. The overall mouth feel is that of chewing tobacco, vanilla, oak and citrus fruit.
The Quiet Man 8yr Single Malt Irish Whiskey, is a 8 Year Old Single Malt Irish Whiskey produced for the Quiet Man range. The whiskey is sourced by Niche drinks located in Derry, Northern Ireland. It is aged for 8 years in former bourbon casks and then transferred to newer first-fill bourbon casks for finishing. On the nose The Quiet Man 8yr Single Malt Irish Whiskey, has strong tropical aromas, such as flowers, fruit and toasted coconut. The palate is full of oak spice, vanilla and papaya flavours. There are also notes of banana and a slight flavour of sawdust. The finish is that of orange bitters and oak spice.

Glendalough 7 Year Old, is a Irish Single Malt produced for the Glendalough Distillery who are based in Wiklow. The Glendalough Distillery was founded in 2011 by five friends. The 7 year old single malt refers to St. Kevin who spent seven years in the wilderness before building the "seven city of churches in the Glendalough Valley. The nose of the Glendalough 7 Year Old Single Malt, is that of green apple and floral aromas. There are also some notes of tropical fruit and spice. The palate is that of some spicy flavours mixed in with some rich sweetness, chocolate and toffee. The finish has planty of fudge flavours as well as some spice and astringent.

Knappogue Castle 12 year old Single Malt, an Independently bottled triple-distilled Irish Single Malt. The Knappogue Castle brand originated in 1966 when an American, Mark Andrews Sir, purchased the Knappogue Castle, outside Ennis in Co.Clare, and while renovating the Castle he began purchasing casks of Whiskey from closed down distilleries in Ireland. He let these casks mature and began bottling them in the late 1980's, most famously as Knappogue Castle 1951.Knappogue Castle 12 year old Single Malt is exclusively matured in ex-bourbon casks for the full 12 years and bottled at 40%abv. It is an incredibly smooth whiskey with a refreshing array of malt spice and citrus fruits. On the nose there are clear notes of malted grains, barley, and white pepper spice. The palate is an infusion of those cereal notes intertwined, with fresh apple and citrus peel. The finish is touch richer with warming spice.

They take a selection of ex-bourbon matured whiskeys of different ages and spread them between 5 ex-wine casks, Port, Sherry, Madeira, White Burgundy, & Cabernet Sauvignon, creating a complex full-flavoured Single Malt.Bottled at 46% and non-chill filtered, Teeling have done everything they can to leave as much flavour in this liquid as possible. On the nose there are distinct floral notes intertwined with soft fruits, citrus and clear european oak spice, The palate is quite subtle with no distinct fruit character standing out from the maturation, rather just delicate and smooth fruits. It is a 12 year old whiskey that has been matured in ex-bourbon barrels and finished of in ex-rum casks from the West Indies.On the nose West Cork 12 Year Old Rum Cask, is light and fresh with lovely aromas of honey, lemon, pineapple and toasted oak, almost like a tropical fruit juice or a fruit cocktail. As for the palate it is soft and delicate with flavours of orchard fruit, honey and grapes. It tastes like a sun holiday lying on a beach.
West Cork 12 Year Old Sherry Cask, is a product of the West Cork Distillery in Skibbereen. It is one of a trio of 12 year old whiskeys to be released by West Cork Distillers in 2016. This particular expression has been finished off in Sherry casks, which in itself released flavours of sweet berries and chocolate.The nose of the West Cork 12 Year Old Sherry Cask, is that of vanilla pod, rhubarb tart and orange peel aromas that all settle together. The palate is that of a typical sherry finished whiskeys with flavours of raisins and dates with hints of nutty notes on the back of your mouth. The finish is somewhat strange with thick blackcurrant flavour. Lovely way to finish a whiskey.

On the nose the Dubliner 10 Year Old, has aromas of vanilla, honey and a complex lavender aroma, which somehow ties in well together. The palate is more complex with a warmness at the front that reminds you of your first taste of an apple tart straight out of the oven. The middle and finish flavours are dominated by chocolate and vanilla. A well-balanced whiskey.

It is cut at 47% ABV and every bottle is numbered individually.From the first smell you begin to realise that Tipperary Watershed Single Malt Irish Whiskey, is a layered whiskey with plenty of interesting aromas. Fresh oak with fruity tones of lemon, melon and mint come to mind. The palate itself is softer than expected. Nice vanilla and apple sauce flavours combined with oak and cinnamon notes.
The Dublin Liberties Copper Alley, is a 10 year old Single Malt from Quintessential Brands. The whiskey has been matured in ex-bourbon oak barrels and finished of in 30 year old Oloroso sherry casks for 6 months. What makes this whiskey so special is the fact that only 31 sherry casks were chosen for this bottling which in turn makes it limited in numbers. The whiskey is non-chill filtered and has a ABV of 46%. The name Copper Alley comes from an area in Dublin City were it was once known for its tradesmen, craftsmen and whiskey taverns.On the nose the Dublin Liberties Copper Alley, is rich and malty, with aromas of dark fruits and soft wooded notes. The palate is smooth and spicy with caramel and a soft flavour of Christmas cake. The finish is soft with a lingering peppery on the tongue.
The Whistler 10 Year Old Single Malt, is a product of the Boann Distillery in Co.Meath. It has been matured in ex-bourbon barrels and finished off in oloroso Sherry casks. This whiskey was released in 2016 and has quickly become a favourite. On the nose the Whistler 10 Year Old Single Malt, has aromas of your mothers fruit cake at Christmas time, with hints of orange peel, vanilla pod and sultanas. The palate is smooth with flavours of salted caramel, roast chicken, sultanas and apricots. A all round lovely whiskey.
Knappogue Castle 14 year old Single Malt, is a triple distilled Single Malt Irish Whiskey. Named "Twin Wood" as it has been matured in both ex-bourbon and ex-sherry casks. It is a non-chill filtered whiskey with an ABV of 46%. On the nose the Knappogue Castle 14 year old, has aromas of an orchard with fresh apples and fruit. This is in harmony with more sherry aromas, such as plums,dates and apricots. There are also undertones of vanilla, butterscoth and carmel, which all work together. On the palate there is a strong flavour of apple zest, with hints of vanilla and plums with a gressy barley finish.

Hyde 10 year old, is a Single Malt Irish Whiskey produced for the Hibernia Distillers in West Cork Ireland. It is a triple distted 10 year old that has been matured in ex-bourbon barrels and finished of in ex-rum barrels, bottled at 46% ABV.The nose of the Hyde 10 year old, is that of fresh baked bread, candy, orange zest and pepper aromas. There is also an undertone of cinnamon and cloves. The palate is that of spiced rum with some fennel, coriander and cedar flavours. There are also tropical fruit flavours, such as vanilla, honey and mango. The finish is that of malty notes with some black pepper to finish.
Tipperary Knockmealdowns Single Malt Irish Whiskey, is the first of the Limited Edition Mountain Range from the Tipperary Boutique Selection. It is created from only 6 ex-bourbon barrels, matured in Ireland for 10 years. On the nose of the Tipperary Knockmealdowns Single Malt Irish Whiskey, you will be hit with plenty of citrus notes, with hints of toasted oak. It is made up of 100% malted barley, matured in american bourbon barrels and finished off in Madeira Casks for 3 months.On the nose the Tyrconnell 10 year old Madeira Single Malt delivers a soft, sweet, smooth caramel aroma with hints of dried fruit and toasted nuts. The palate itself has plenty of soft malty tones with a touch of spice and nuttiness. The fruity flavours from the madeira casks persist all the way to the finish.

The whiskey was named after the founders father who was a bartender who even though he heard many stories he always kept himself to himself. On the nose of The Quiet Man 12yr Single Malt Irish Whiskey, there are aromas of baked brownies and melted butter. There are notes of honey and chocolate pudding. The palate is that of orange peel flavours aswell as some chocolate and black pepper notes. The finish has some soft oak and rich honey flavours.
Connemara 12 year old Peated Single Malt, is one of the few Peated whiskeys in Ireland. It is produced by the Kilbeggan Distilling company at the Cooley Distillery in Co.Louth.The whiskey itself, has quite a fresh palate, with lemon citrus notes, smoked honey, and toasted oak, turning to green fruits, apple and pears. It's got great depth, and a full rounded heated texture. It's a little more earthen than the Islay Malts of Scotland, which makes for a distinctive point of difference.
The Teeling Brabazon, is the lasted Single Malt to come out of the Teeling Distillery. It is the first of a series. The whiskey has come from a range of barrels matured to different ages, the youngest coming from 2008 and the oldest from 2002. The majority of the whiskey has been matured in ex-Sherry casks with a small amount being matured in PX or Oloroso sherry casks. This Batch No.1 has a limited amount of 12,500 bottles and is bottled at 49.5% ABV. The name Brabazon comes from Lord Brabazon the 3rd Earl of Meath who was responsible for the development of Newmarket Square, where the Teeling Whiskey Distillery is suited in the Liberties.On the nose the Teeling Brabazon, has aromas of dried fruits, citrus, walnuts and a hint of prunes. On the palate there is a initial sense of cured ham and leather. As the whiskey flows around your mouth more flavours of dates, orange peel, cinnamon and ginger come through. The finish is that of spice and fruity notes.
