Prizefight Irish Whiskey, is a Blended Irish Whiskey that was distilled at West Cork Distillery. It has been aged in ex-bourbon barrels and finished off in rye barrels sourced from the Tamworth Distillery in New Hampshire. This use of rye barrels has added some undertones of spice and herbs.
On the nose Prizefight, is light and soft with aromas of lemon, ginger, green apples and mint. The palate is light and fresh with flavours of vanilla, ginger, oak and hints of apples. The finish is that of spice from the rye barrels.

Tipperary Watershed Single Malt
Tipperary Watershed Single Malt Irish Whiskey, has been chosen from only six first-fill bourbon casks for each batch and has been carefully selected by Tipperary's Boutique Malt Master, Stuart Nickerson. It is cut at 47% ABV and every bottle is numbered individually.
From the first smell you begin to realise that Tipperary Watershed Single Malt Irish Whiskey, is a layered whiskey with plenty of interesting aromas. Fresh oak with fruity tones of lemon, melon and mint come to mind. The palate itself is softer than expected. Nice vanilla and apple sauce flavours combined with oak and cinnamon notes.

The Irishman Single Malt
The Irishman Single Malt Irish Whiskey, is a Single Malt matured in both ex-bourbon and ex-sherry casks. These casks have then been perfectly selected by Bernard Walsh from the Walsh Whiskey Distillery in Carlow.
On the nose The Irishman Single Malt Irish Whiskey, has a soft, sweet aroma with hints of roasted almonds. On the palate there is a distinctive dark chocolate taste and a finish of black pepper. Very interesting.

Mad March Hare Poitin
Mad March Hare Poitin is a new poitin on the Irish Market. Poitin is the Gaelic word meaning "little pot", this refers to the fact that it was traditionally distilled in small copper pot stills. Poitin was finally legalised in 1997 after having to go underground for so many years. The name of the Poitin comes from an Irish character known as Mooney who distributed his famous poitin throughout the land. He has an infamous relationship with the law and was affectionately know as "mad as a March Hare".

Knappogue Castle 12 Year Old Single Malt
Knappogue Castle 12 year old Single Malt is an Independently bottled triple-distilled Irish Single Malt. The Knappogue Castle brand originated in 1966 when an American, Sir Mark Andrews purchased the Knappogue Castle outside Ennis in Co.Clare and while renovating the Castle he began purchasing casks of Whiskey from closed down distilleries in Ireland. He let these casks mature and began bottling them in the late 1980's most famously as Knappogue Castle 1951.
Knappogue Castle 12 year old Single Malt is exclusively matured in ex-bourbon casks for the full 12 years and bottled at 40%abv. It is an incredibly smooth whiskey with a refreshing array of malt spice and citrus fruits. On the nose there are clear notes of malted grains and white pepper spice. The palate is an infusion of those cereal notes intertwined with fresh apple, melon and citrus peel. The finish is a touch richer with warming spice.

Jack Ryan 12 Year Old Single Malt
Jack Ryan 12 Year Old Single Malt, is a 12 Year Old Single Malt Irish Whiskey produced to celebrate the Ryan's Beggars Bush 100th Year Anniversary in 2013. The label on the bottle depicts an image from 1913 of the exterior of the landmark public house and original lamp post that still stands today. The whiskey has been matured in ex-bourbon barrels with only 1450 being bottled.
The nose of the Jack Ryan 12 Year Old Single Malt, is that of vanilla and honey aromas, with hints of oak and citrus fruit. The palate is that of some sweetness and some woodiness flavours. There are also notes of lemon curd and rhubarb tart. The finish is soft and smooth.

On the nose The Irishman 12 Year Old Single Malt, has a sweet caramel and toffee smell, its clear from the first smell that the barrel used is that of bourbon. There are also undermines of wood and fresh cut grass during the summer time. As for the palate there is a distinct taste of charred oak and black peppercorn with hints of fresh apples and pears. The taste lingers on until the last drop.

Knappogue Castle 14 year old Single Malt, is a triple distilled Single Malt Irish Whiskey. Named "Twin Wood" as it has been matured in both ex-bourbon and ex-sherry casks. It is a non-chill filtered whiskey with an ABV of 46%.
On the nose the Knappogue Castle 14 year old, has aromas of an orchard with fresh apples and fruit. This is in harmony with more sherry aromas, such as plums,dates and apricots. There are also undertones of vanilla, butterscoth and carmel, which all work together. On the palate there is a strong flavour of apple zest, with hints of vanilla and plums with a gressy barley finish.

Knappogue Castle 16 year old is a Single Malt Whiskey produced by the Castle Brands Co. It is a triple distilled Single Malt from the Bushmills Distillery in Northern Ireland. The whiskey has been matured in ex-bourbon barrels and in the end it has been married together with Oloroso Sherry Casks.
On the nose Knappogue Castle 16 years old has malty, grassy aromas with undertones of mellow wood and some fruity sherry notes. On the palate there are plenty of rich, complex & malty flavours. The finish is that of sweetness coming from the sherry casks and harmonises the whiskey as a whole.

The Irishman Cask Strength
The Irishman Cask Strength Irish Whiskey, is a limited edition whiskey carefully selected by Bernard Walsh from the Walsh Whiskey Distillery in Carlow. It has been left at its glorious cask strength, so it has not been watered down to the usually 40-46%. This whiskey comes in at about 54% ABV and 108 proof.
From the first smell The Irishman Cask Strength Irish Whiskey, has the uniquely ginger smell that seems to be prominent in most of the Irishman Range. There is also hints of fruit cake that would bring back memories of your Grannys cooking. As for the taste there is a spiciness that lingers from the first sip till the last but it is balanced out by a creamy oak taste. All in all a enjoyable whiskey from start to finish.
