The Hennessy Cognac distillery was founded by an Irishman by the name of Richard Hennessy in 1765. The Hennessy VS is one of the most famous Cognacs in the world, the VS of course standing for "Very Special" and means that the youngest eaux-de-vie in this blend are at least 2.5 years old.

Martell V.S. Fine Cognac, is a Cognac from the House of Martell in France. Martell VS was created more than 150 years ago uder the name of "Trois Etoiles" (Three Stars), and is intended for drinking as a long drink or in a cocktail. It has been aged in Limousin oak barrels for about 5 to 7 years and is blended from eaux-de-vie of the four major zones of the cognac region.
On the nose Martell V.S. Fine Cognac, is rich in fruit aromas, with some spice notes. There are also undertones of fresh fruit aromas, such as citrus, pear and saffron. The palate is woody and spicy with a pleasant freash and velvety texture. There are also flavours of fresh fruit such as red berries, plums and ginger. A smooth cognac to round off the week.

Remy Martin VSOP Cognac, is a Cognac from the Cognac region in France. The Remy Martin Company was founded in 1724, and is named after the founder. In 1927 they launched the first VSOP Fine Champagne, that is still going strong till this day, being the biggest selling VSOP cognac worldwide. The frosted bottle itself was introduced in 1972. The blend itself contains 55% Grande Champagne eaux-de-vie, the rest being made up from the Petite Champagne. A lovely floral Cognac with a rich and well balanced palate. Courvoisier V.S.O.P. Fine Champagne Cognac is a Cognac based in the town of Jarnac in the Charente region of France. The company is now owned by Beam Suntory, a Japanese Company. The company was originally established in Paris and dates back to 1809.
The bottle itself states that it is "Le Cognac de Napoleon", the story goes that Napoleon Bonaparte took several barrels of Courvoisier Cognac with him to St. Helena as a treat to the English officers on the ship. The cognac is made up of two sub-regions in Cognac: Grande Champagne and Petit Champagne. It is a light cognac with flavours of apple and caramel.

Martell VSOP Medaillon Cognac
Martell VSOP, is a Medaillon Cognac from the House of Martell in France. It was 1831 when Martell created his first VSOP cognac, it was first exported to japan and other Asian markets, such as Vietnam, Karea and Indonesia. The cognac is a blend of old eaux-de-vie chosen from the best crus in the Cognac region. The bottle bears a gold medallion engraved with the portrait of Louis XIV and commemorates the year 1715, the burth of the House of Martell.
On the nose of Martell VSOP, is that of bittersweet softness with undertones of lime and liquorice. There are also aromas of crystaillised fruit, such as raisin and plum with a warming oak wood aroma. The palate is soft and mellow with some complex flavours of dates, plums and raisins. It is a well-rounded body with a long soft finish.

Hennessy V.S.O.P Privilège
Hennessy V.S.O.P Privilège, In 1817 Hennessy Cognac was so highly regarded that the Prince of Wales asked the Hennessy House to produce what was termed a "very superior old pale", which in turn brought us to the genesis for the initials VSOP, which have become a labelling standard in the industry. The spirit itself is produced from the fruity Ugni Blanc grapes which where harvested from the four great crus of the cognac region. The grape wine is than double distilled and set down to age for at least 4 years in French oak casks.
All in all the Hennessy V.S.O.P Privilege is an excellent Cognac. The spirit is full of rich oak and vanilla flavours with some amazing rich fruit flavours also. There is also a hint of sweet maple that seem to bring everything together nicely.

Torres Jaime I 30 Year old, is a Brandy from the House of Torres in the Penedes region of Catalan, Spain. The Torres name dates back to the 18th century when the Torres family bought their first vineyard. The House of Torres created this old noblesse brandy which carries the founder's name. The brandy has been made with very old 'soleras' aged from selected distilled white wines. There is also a small amount of 1972 eau-de-vie to add an element of fruit and freshness to the brandy.
The nose of the Torres Jaime I 30 Year Old, has aromas of coconut, spice and fruit. The palate profile is rich and thick as it coats your mouth in a very moreish way. The flavours are that of dried fruit, such as dates, prunes and spices. A long, well rounded finish that leaves a velvety imprint on the palate that leaves you wanting more.

Martell XO, is a Cognac from France. The Martell House is one of the oldest cognac houses, founded in1715 by Jean Martell and is now owned by the Pernod-Ricard Group. In 2005 Martell XO was created, it is a blend of crus from Les Borderies and Grande Champagne. It incorporates eaux-de-vie up to 35 years old with a minimum age of 10 years.
The nose of the Martell XO, is rich with spice and red berries. There are also some aromas of chutney, almonds and walnuts, with hints of beeswax and sandalwood. The palate is well rounded with notes of figs and walnut flavours with a characteristic power and finesse of eaux-de-vie from Grande Champagne. It also has a long silken finish.
