Glendalough is a small craft distillery that harnesses its tradition, heritage and the origin of Whiskey. To really harness the roots of Whiskey, you have to go back to Poitin (pronounced potcheen). The first spirit that was ever distilled, according to certain records, is traditionally distilled in a small pot still made from malted barley, treacle, potatoes, sugar beet or wheat. his prime water of life became a thing of a legend, especially because it was outlawed in 1661 by King Charles II
Glendalough Poitin is made from sugar beet and malted barley. The mash must ferment for 72 hours to achieve a high alcohol content. It is matured in virgin Irish oak casks. Using the old recipes passed down through generations for over fourteen centuries, this is a true Irish spirit.
Glendalough's Wild Botanical gin is made from wild plants, foraged from close by their mountains ringed distillery. All ingredients are used within hours of being harvested, giving full fresh flavour to their gin and an extra hint of the wild.
Glendalough Double Barrel, is produced for the Glendalough Distillery located in Wicklow. The double barrel whisky is a step in a different direction, its made up for corn and malted barley, matred for just over 3 years in ex-bourbon barrels with 6 months in ex-oloroso sherry casks.

The aromas from the Glendalough Double Barrel, are that of figs, dates and apricot. There are also some sweet vanilla and toffee aromas. The palate is that of spice, red berries and sweet caramel. There are also some cinnamon and coffee flavours mixed in. The finish is that of hot spice and vanilla.
